Sun Dried Tomato Pesto

Healthy, super low in sugar, and perfect accompaniment to spread on protein and pasta replacements. I also add it as a dip with gluten-free crackers as seen below.

1 8.5 oz. jar sun-dried tomatoes

  • 3/4 cup shredded organic Parmesan cheese

  • 2-3 fresh garlic cloves

  • 1/2 cup nuts (I prefer macadamia nuts)

  • 1/2 cup EVOO (extra-virgin olive oil)

Combine ingredients in a food processor or high-powered blender.
