Easy Roasted Cabbage Wedges

You are only 4 ingredients and 15 minutes away from these delicious roasted cabbage wedges! It's the perfect veggie for a busy on-the-go lifestyle and can quickly become a staple for your weekly meals. Check out the recipe below, it will blow your mind how quick and easy it is. 🙌

INGREDIENTS:

  • 6 cups Purple Cabbage (sliced into wedges)

  • 1 tbsp Avocado Oil

  • 1/4 tsp Sea Salt

  • 1 tbsp Lemon Juice

INSTRUCTIONS:

1. Preheat the oven to 425ºF (218ºC) and line a baking sheet with parchment paper. Place the cabbage wedges on the baking sheet and drizzle all sides with avocado oil. Sprinkle with sea salt.

2. Bake for 15 minutes, remove and flip the wedges over. Bake for 15 minutes more. Remove from the oven, squeeze lemon juice on top and serve. Enjoy!

NOTES:

Leftovers

  • Refrigerate in an airtight container for up to three days.

No Avocado Oil

  • Use olive oil or coconut oil.

More Flavor

  • Season with garlic powder, nutritional yeast or parmesan cheese.

Additional Toppings

  • Top with bacon, coconut bacon or tahini.
