Gluten-Free Lemon Loaf

Ready to upgrade your lemon loaf? Made with gluten-free flour, eggs, and butter, this is about as healthy as lemon loaf gets. This recipe also freezes well, though it probably won't last that long!


Loaf Recipe

Ingredients

1 1/2 cups gluten-free flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. sea salt

1 cup organic sugar

3 eggs

2 tbsp. butter, softened

1 tsp. vanilla

1 tsp. lemon extract

1/3 cup lemon juice

1/2 cup coconut oil

 Instructions

  1. Mix first four ingredients—gluten-free flour, baking powder, baking soda, and salt--in a bowl. 

  2. In a separate medium-sized bowl use a mixer to blend the eggs, sugar, butter, vanilla, lemon extract and lemon juice.

  3. Pour wet ingredients into the dry ingredients and blend till smooth.  Add coconut oil and mix well.

  4. Pour batter into 9x5 loaf pan.  Bake 45 minutes at 350 or until done.

 



Icing Recipe

Ingredients

1 cup powdered sugar

2 tbsp. organic whole milk

1/2 tsp. lemon extract

 

Instructions

Combine all ingredients in a small bowl.  Mix with electric mixer at low speed.  When loaf is cool, remove from pan and frost with icing.  Let icing set before slicing.
