If you’re looking to spend less time in the kitchen but still make good meals for your family, Cook Once Dinner Fix is a great cookbook! It’s very much in line with the way I like to cook and my family has loved all of the recipes I’ve made from it.

This week I’m talking to the author, Cassy Joy Garcia of Fed + Fit, about how to use it, how it’s different from her other cookbook (Cook Once, Eat All Week) and how it helps you save time, energy and money.

  • We’re practically neighbors, even though you live in San Antonio which is a few hours away from me - in Texas perspective  -  that’s not very far. It’s where I go if I’m going to the big city  -  like to Costco. 

  • Where do you do most of your grocery shopping?

    • A lot of it is online grocery shopping

    • H-E-B

    • Sprouts

    • Whole Foods / Trader’s Joes

(5:05) What’s that process like for you when you’re trying to create and test recipes? Where do  you get inspiration for your recipes and then how do you go about testing them out?

  • Recipe development starts with pen and paper

    • Building an outline of chapters and sees what puzzle pieces fall into place

    • Pinterest inspiration

    • Simplifying instead of making more complicated

  1. Side dishes / Complete meals

  2. Less prep time

  3. Ingredient variety

  4. Incorporating seafood and vegetarian dishes

(15:25) You say in the introduction this cookbook is the most “you.” How do you mean?

  • Intuitively cooks with this formula

  • Making extra protein without putting in additional time and effort

  • Oldest of 3 girls — remembers making the first dinner for them

  • In college — Tinkered with things when moved into an apartment

  • Gluten intolerant blossomed further experimentation

  • Cooking with kids

(27:48) What does a typical day look like for you?

  • Wake up at 7AM

  • Austin makes the girls breakfast, I get them dressed and ready

  • Then it’s off to the races!

  • Goes into the office at Fed & Fit

  • After school— play, cook and eat dinner

  • He bathes the girls, I clean up after dinner

(32:06) What do you eat for breafast and lunches?

  • This morning it was a KIND bar! Some days are just like that

  • Ideally a hot breakfast kind of gal

    • Lemony kale with berries

    • Sweet plantain

    • Fried eggs

  • Unconventional breakfasts

  • I cannot put out a recipe book without considering someone with allergy restrictions or dietary needs. There is value in here for you!
