  • Hello my friend welcome back to the club how are you today?

  • I’m thrilled because we have Judy Cho, author of Carnivore Cure, with us. She is an NTP and a nutritional advocate for a meat-based diet. She says that animal foods gave her a second chance at life. There are so many people who have found healing by switching to a meat-focused way of eating and I have been wanting to have someone on the podcast to share their success story. So we have that today and literally the woman who wrote the book on it.

(1:35) Tell us more about your background and what led you to a carnivore diet. 

  • Was plant-based for about 12 years

  • Struggled with disordered eating

  • Got sick after having her first son

  • Found that keto helped, but was still stuck on an unhealthy cycle

  • Switching to Carnivore resolved her mental health struggle with food

(7:11) Abstaining vs. Moderating

  • Kept thinking “I am broken” while trying to moderate

  • Better Than Before by Gretchen Rubin

  • Our culture leans on food for comfort

  • Thinking out food as an addiction no different than alcohol

  • Abstainer personalities are “all in” in their mindset

  • 99% abstinence from carbs was much harder than being 100% abstinent.

(12:42) When I reached out, I didn’t know that faith played a role in your healing journey (see how good God is to have led me to you 😊) - tell us about that.

  • Began to lean on reading scripture during difficult times.

  • Nehemiah - Building the wall

  • Her foundation became shakable and rooted in faith.

(17:49) There are many Biblical health advocates that say we should only eat plants because they came first in the Bible and that’s what Adam and Eve ate in the garden and so that must be what God intended us to eat. What are your thoughts on that?

  • Rules of The Old Testament

  • Evidence that we were not meant to just be plant-based

  • Modern day challenges of toxic chemicals in plant foods

  • Ruminant animals

(25:24) It’s so counterintuitive to think that plants could be harmful - especially in this very plant-centric dietary space we live in. Explain some of the ways plant foods can be problematic for health.

  • Animals are able to run from predators, but plants cannot.

  • Plants have compounds to help them protect themselves and continue their offspring.

  • Low-oxalate diet

  • Dr. Steve Gundry - Lectins

  • All plants have anti-nutrients

  • Elimination diet

  • Nutrient absorption and conversion in the body

  • Types of fats

  • 200 years ago we were not eating coconut oil

  • We were eating animal fats

(36:20) I think the concern many people have of going on a meat-based diet is that they’ll be missing out on key nutrients like vitamin C and on fiber. And I think people are worried they’ll never poop eating so much meat. Are nutrient and fiber deficiencies a problem?

  • Standard American Diet

  • Fiber studies - The people that felt the best were eating limited fiber.

    • Fiber bulks up your stool

  • Healthy User Bias

(48:20) Your book is a great resource, could you give us some pointers for anyone thinking of a carnivore elimination diet?

  • All elimination diets remove types of plant foods.

  • Instead of dabbling in everything, finding a baseline by eliminating all plants for awhile.

  • Preparing your environment is a crucial step.

  • Finding a community that will support you.

  • Starting with ruminant meats: beef, elk, lamb.

  • Most people do need digestive support
